Make your own rice noodles

Guo Yuanyuan, the founder of Old Pot Farm, has followed the centuries-old tradition of making rice noodles since he was a child, and witnessed the height of popularity of Mifenliao, Hsinchu. However, with the westernization of modern diets, rice food is no longer the only option. The once-lively rice noodle business has gone from more than 100 shops in its heyday to less than 10 shops left, and continues on its gradual decline.

Fearing the disappearance of rice noodle culture, Guo Yuanyuan established Old Pot Farm in 2000 in order to preserve the local culture. In 2015, the baton was handed over to the next generation, and is currently managed by his son Guo Youhao and daughter-in-law Wang Yiyi. Old Pot Farm imports Zai Lai Rice to make rice noodles. Rice goes through selection, multiple rinses, draining, grinded to fine powder, knead into rice balls and steamed till half-cooked, then crushed and stirred into ricedough, pressed into flakes, rolled into cylinders and pressed into shreds. The end-product is rolled into a circle and steamed, then kneaded, and finally cut into pieces, reorganized, air-dried, dryness and weight measurements are taken, and packaged, A total of 19 steps are taken before rice noodles can be made.

Old Pot Farm has set up a rice noodle museum to showcase the history of Hsinchu rice noodle houses. Utensils for making flour, from the ancient stone grinder, the traditional stove, and even the rice noodle cart from Hui'an, Fujian are on display for visitors to see the laboring process of rice noodles production before the use of machines.

Inspired by the production process of rice noodles, Old Pot Farm crafts the semi-finished products that have undergone more than 10 steps into a rice noodle-making activity, where adults and children can get to know the process of making rice noodles, and experience the wisdom and hard work involved in their making.

In addition, a series of rice food experience courses are planned for both children and adults. Tourists can go on a one-day tour where they get a chance to DIY rice noodles, Hakka glutinous rice balls and mochi, and traditional popped rice while also going on a guided nature tour. Restaurants in the orchard offer rice noodle-flavored meals such as the traditional fried rice noodles, sesame oil chicken, vegetable rice noodle soup, rice noodle vegetable cake, and others. Visitors experience the rice noodles from nature onto the dining table.
